Pecan Snowball Cookies
Buttery cookies with a pecan crunch!
1/2 cup (1 stick) butter, softened
1/4 cup powdered sugar + more for rolling
Pinch salt
3/4 tsp. vanilla
1 cup + 2 tbsp. flour
1/2 cup chopped pecan
Preheat oven to 350°F and prepare a baking sheet lined with parchment paper.
Using an electric mixer, cream butter and powdered sugar on medium speed. Turn speed to low and add salt, vanilla, flour, and chopped pecans. Mix until dough just comes together.
Roll dough into 1” balls and place on baking sheet leaving a couple of inches of space in between. Bake for 10-12 minutes or until the cookies are very lightly browned. While cookies bake fill a small bowl with powdered sugar.
Remove from oven and allow to cool just slightly until you are able to handle them. Roll cookies in powdered sugar and transfer to a wire rack to continue cooling.
