Salted Butterscotch Chip Chocolate Cookies
1 and 1/3 cups flour
1/3 cup unsweetened cocoa powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup salted butter, softened (unsalted will work too)
1/2 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp. vanilla
1/2 cup butterscotch chips (I used these)
Course sea salt for garnishing
In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
In the bowl, beat the butter, brown sugar, and granulated sugar until smooth with a handheld mixer. Mix in the egg and then the vanilla until well combined, scraping down the sides of the bowl as needed.
Slowly add the dry ingredients to the wet ingredients and mix until just combined.
Stir in butterscotch chips until just incorporated
Cover and refrigerate dough for at least 30 minutes.
Preheat oven to 350°F. Line two large baking sheets with parchment paper and set aside.
Remove the dough from the refrigerator and scoop out about 2 tbsp. sized pieces of dough onto the baking sheet.
Bake at 350°F for 10-12 minutes.
Remove from the oven and cool on the baking sheet for 10 minutes, then transfer to a
wire rack to finish cooling.
