Cheesecake Cookies
makes 44 cookies | difficulty level: easy
8 oz cream cheese, room temperature
1/2 cup butter
1 1/4 cup sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
Powdered Sugar to top
Preheat oven to 375 degrees and prep 2 large baking sheets with parchment paper.
Beat cream cheese and butter until light and fluffy. Add sugar and beat until fully incorporated. Beat in eggs and vanilla.
In a separate bowl, combine flour, baking powder and salt. Gradually add to the cream cheese / butter mixture being careful to not overmix.
Using a tablespoon cookie scoop, scoop onto baking sheets and bake for 10-12 minutes. Cookies will be light and not browned.
Cool cookies on a wire rack and sprinkle powdered sugar to top.
