Banana Bread Roll-Up Cake
Sweet swirls of cream cheese filling flows through layers of scrumptious cake to create this Banana Bread Roll-up Cake. The perfectly sweet treat was created by Smitten Kitchen.

Cake:
- 3 eggs
- 1/3 cup brown sugar
- 1/3 cup sugar
- 2/3 cup ripe banana, mashed (about 1 - 1 1/2 medium bananas)
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 3/4 tsp. cinnamon
- Pinch nutmeg
- Pinch cloves
- 1/4 tsp. kosher salt
- 3/4 cup flour
- Powdered sugar for spinkling
- Cooking spray to prep pan
Filling:
- 8 oz. cream cheese, room temperature
- 2 tbsp. unsalted butter, room temperature
- 3/4 cup powdered sugar, plus more for spinkling
- 1 tsp. vanilla extract
- Preheat oven to 350° and line a 10"x15" rimmed baking sheet with parchment paper and lightly spray with cooking oil.
- Beat the eggs in a large bowl until foamy, then continue beating while slowly adding the sugar and brown sugar. Beat until very thick, about 5-10 minutes. Beat in bananas and vanilla. Sprinkle in baking soda and spices then beat to combine. Add the flour, and beat just until it disappears. Spread the batter into your prepared pan.
- Bake the cake for 10-12 minutes or until it's lightly bronzed all over and it springs back when lightly touched. Rotate the baking sheet halfway through.
- Cool cake for 5 minutes on a baking rack, then run a knife around the edges to loosen the cake. Sprinkle the top of the cake lightly with powdered sugar. Place a second sheet of parchment paper, this one, larger than the cake. Flip the cake out onto the now parchment-covered baking rack. Carefully peel away the parchment paper from the bottom. Lightly powder this side, too. Starting from the short side, roll the cake and remaining parchment together into a log, and rest it, seam side down on the rack to completely cool, for about 45 minutes.
- Beat the cream cheese, butter, 3/4 cup powdered sugar, and vanilla together until light and fluffy. Carefully unroll the cake, and spread the top with cream-cheese filling. Slowly, carefully, re-roll the cake with the frosting inside, and rest it, seam side down on a serving platter.
- Place in fridge to cool and set, then sprinkle top with additional powdered sugar. Cut cake into slices.
