Red Pepper Relish
The perfect addition to your next sandwich or cheese platter!
1 tbsp. olive oil
1 small onion, finely diced
3 red bell peppers, finely diced
½ cup + 1 tbsp red wine vinegar
3-4 tbsp. sugar
hot chilli flakes, to taste
salt, to taste
Heat olive oil in a large pan. Add onion and sauté gently, on a low heat, until slightly tender.
Add finely red bell pepper to onions. Stir to combine and cook for about 4-5 minutes.
Add red wine vinegar, sugar, a good pinch of salt and hot chilli flakes. Mix well. Let the mixture cook slowly, on a very low heat, stirring from time to time, until the red pepper becomes sticky, translucent, and very tender.
Taste and adjust the salt, sugar and spice content to your liking. After the relish cools down, transfer to a jar or sealed container.
