Apple Chamomile Tea Cakes
1 1/2 cups flour
1 tbsp. baking powder
1/2 tsp. salt
1 tbsp. dried chamomile (you can also cut open chamomile teabags and use the dried leaves)
3 eggs
1 cup sugar
1 cup whole milk yogurt
1/2 cup canola or vegetable oil
5-6 oz. apples, peeled and chopped
Preheat oven to 350°F and thoroughly grease a mini bundt cake pan.
In a large bowl, combine the flour, baking powder, salt, and chamomile, whisking until combined.
In a medium bowl, whisk together the eggs, sugar, yogurt, and olive oil. Pour the wet ingredients over the dry and whisk together just until just blended. Fold in the apples into the batter and pour into the mini bundts.
Bake for about 25-30 minutes or until an inserted toothpick comes out clean. Let cakes cool slightly before turning onto a wire rack to cool completely.
