Veggie Tater Tot Breakfast Bake
Looking to feed a crowd? This recipe can be doubled to accommodate a 9”x13” baking dish.
1/2 lb. frozen broccoli
1/2 medium red bell pepper, diced
3 tbsp. scallions, thinly sliced
1 cup cheddar cheese, grated and divided
5 eggs
1/2 cup half and half or heavy cream
16 oz. frozen tater tots
salt and pepper
Preheat oven to 375°F and spray an 8”x8” baking dish with non-stick spray.
Steam the broccoli by following the microwave instructions on the package. Drain well, then coarsely chop the tender florets.
Transfer broccoli to the baking dish and arrange in an even layer. Sprinkle the red bell pepper and scallions over the broccoli then sprinkle half of the shredded cheese. Sprinkle with salt.
Place eggs and half and half into a mixing bowl and beat with a whisk until smooth. Season with salt and pepper, then pour over the vegetables and cheese in the baking dish.
Lay the tater tots over the egg mixture in an even and tight layer. Lightly spray the tater tots with cooking spray and place the dish in oven. Bake for 30 minutes, then sprinkle remaining cheese on top before baking for another 15-20 minutes until cheese is melted and eggs are set. Allow dish to cool for about 10 minutes before serving.
Recipe Notes:
If doubling recipe, the dish may need to be baked longer after adding the cheese - up to 30 minutes.
