Chocolate Snack Cake
Makes one 8” sq. cake
3/4 cup + 2 tbsp. Flour (spooned and leveled)
1/4 cup Unsweetened Cocoa Powder
3/4 tsp. Baking powder
3/4 tsp. Baking soda
1/4 tsp. Salt
3/4 cup Sugar
1 Egg
1/2 cup Milk
1/4 cup Vegetable Oil
1/2 tsp. Vanilla
1/4 cup Boiling Water
1/4 cup Coffee
Powdered Sugar for serving
Preheat oven to 350°F and line an 8”x8” baking pan with parchment paper, then lightly grease. Set aside.
In a medium bowl, combine flour, cocoa powder, baking powder, baking soda, and salt and whisk until incorporated. Add sugar and whisk again. Set aside.
In a large bowl, combine egg and vegetable oil. Whisk until smooth. Add vanilla and whisk again.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Then, add the coffee and boiling water, stirring until smooth. Do not overmix.
Transfer batter to the baking pan and bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
Allow cake to cool before removing from pan. Dust with powdered sugar and serve.
