Matcha Shortbread Cookies
2 cups flour
2 tbsp. matcha powder (I like this brand) + more for sprinkling
1/4 tsp. salt
1 cup butter, softened
1/2 cup powdered sugar
White + dark chocolate for dipping (optional)
Sift flour, matcha, and salt together in a medium bowl.
Cream butter and powdered sugar together using a handheld mixer. Once light and fluffy, slowly add the dry ingredients. Continue mixing on low until all ingredients are just incorporated.
Shape dough into a disk, cover, and refrigerate for about 30 minutes.
Preheat oven to 350°F. Line a large baking sheet with parchment paper.
Roll out dough on a lightly floured surface until it’s about 1/4” thick. Cut dough into desired shapes and place on the baking sheet. Bake for 10-12 minutes then transfer cookies to a wire rack to cool completely.
Dip shortbread in melted chocolates and sprinkle with additional matcha.
