Mini Cheddar and Chive Scones
makes about 14 scones | difficulty level: easy
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. sugar
5 oz. grated cheddar cheese
1/2 oz. finely chopped chives
1 cup plus 2 tbsp. heavy cream
1 egg, beaten
Preheat oven to 400 degrees and prep a baking sheet with parchment paper.
Whisk flour, baking powder, sugar, salt, cheddar cheese, and chives.
Make a well in the center and add the heavy cream. Gently toss the dry ingredients into the liquid. Do not overmix.
Gently roll out the dough until it is just under 1/2 inch thick. Cut out round shaped pieces and place on the baking sheet and brush the tops with a beaten egg.
Bake for 12-15 minutes or until scones are golden.
