Churro Waffles
A spin on Churros as you know it - this recipe uses a waffle iron instead of a deep fryer for a healthier, but just as tasty treat.
Makes about 3 servings | difficulty level: easy
- 4 tablespoons unsalted butter, plus more for topping
- 1 tablespoon sugar, plus more for topping
- 1/4 teaspoon salt
- 1/2 cup water
- 1/4 teaspoon cinnamon, plus more for topping
- 1/2 cup all-purpose flour
- 2 eggs
- In a small saucepan, bring butter, sugar, salt, water, and cinnamon to a simmer over medium-high heat.
- Once the butter has melted and sugar and salt have dissolved, lower heat to medium-low and add flour and begin stirring rapidly. Continue to stir for about a minute more - the thick batter will form rapidly.
- Remove from heat and allow mixture to stand for 5 minutes. Then, add the eggs one at a time until fully combined.
- Preheat your waffle maker. While the iron is heating up, combine about 3 tablespoons sugar and 1/2 tablespoon cinnamon and set aside in a dish. Next, melt about 3 tablespoons butter in a small bowl and set aside.
- Add about 1/4 cup batter (depending on the size of your waffle iron) to the waffle iron and close the lid for about 5-8 minutes or until churros are golden brown.
- Remove from iron and brush sides with the melted butter and then roll in the cinnamon sugar topping. Repeat with remaining batter.
Notes:
Serve with chocolate sauce for dipping.
