French Toast Roll-Ups
Give this unique recipe for French Toast Roll-Ups a try - they are sweet, crunchy, and melt in your mouth!
makes about 4 servings | difficulty level: moderate
- 8 slices of bread - I used Trader Joes' Sliced French Brioche
- 3 tablespoons unsalted butter, melted
- 3 tablespoons granulated sugar, plus 2 tbsp. for topping
- 2 tablespoons brown sugar
- 1 tablespoon ground cinnamon, plus 2 tsp. for topping
- 2 large eggs
- ¼ cup milk
- 3 tablespoons butter, for pan
- Trim the crust of the bread. Using a rolling pin, roll the bread out until very thin - about 1/8" thick.
- In a small microwave-safe bowl, melt 3 tablespoons butter until just melted. With a fork, stir in 3 tablespoons granulated sugar, 2 tablespoons brown sugar and 1 tablespoon cinnamon until a smooth spreadable mixture forms. Set aside.
- Whisk together the eggs and milk in a shallow bowl. Set aside.
- Stir together 2 tablespoons granulated sugar with 2 teaspoons cinnamon in another small bowl. Set aside.
- Place 3 tablespoons butter in a large non-stick pan and let melt over medium heat. Dip one roll at a time in the egg mixture and place in the pan. Allow roll ups to cook for about 1-2 minutes per side until golden brown and slightly crisp on the outside. Remove from pan and sprinkle each roll up generously with the cinnamon-sugar mixture.
- Serve immediately.
