Peanut Butter and Jelly Blondies

makes 9 blondies | difficulty level: easy
1/2 cup (1 stick) salted butter, melted
1 1/4 cup flour
1 tsp. baking powder
2 eggs
1 1/2 cups brown sugar
3/4 cup creamy peanut butter
1 tsp. vanilla
3-4 tbsp. strawberry fruit spread
Chopped peanuts for topping
Preheat oven to 350° F and line a 8x8 pan with parchment paper and non-stick spray.
Combine flour and baking powder in a medium bowl and set aside.
Whisk together the butter, eggs, brown sugar, vanilla and peanut butter. Fold in the dry ingredients using a rubber spatula.
Add batter to prepared pan and drop tablespoon dollops of the strawberry fruit spread on top and swirl with a knife. Top with chopped peanuts and bake for about 35 minutes or until a toothpick, inserted in the center, comes out clean.
Notes:
The blondies can be stored in an airtight container at room temperature for about 1 week.
