Peanut Butter Funfetti Kettle Corn

  1. Pop popcorn and set aside in a large mixing bowl.

  2. Line a baking sheet with parchment paper and set aside as well.

  3. In a small saucepan over medium heat, warm the sugar and honey. Stir every so often using a rubber spatula and making sure the mixture doesn't stick to the sides. Once the mixture begins to bubble, let it cook for 2-3 minutes.

  4. Add peanut butter and salt and mix until smooth.

  5. Working very quickly, pour the mixture on top of the popcorn and gently stir. When it looks like you are about halfway in this process, add a handful of sprinkles and continue to combine. Transfer to the baking sheet and separate any clumps and add more sprinkles on top if desired. Allow to cool for about 20 minutes and serve immediately.
