Matcha Chia Pudding
The only chia seed pudding you need! The original recipe is from Vanilla and Bean, check it out here.
makes 3 mini jars or 2 medium-sized ramekins | difficulty level: easy
1 1/2 cups unsweetened almond milk
1 tbsp. maple syrup or agave
2 1/4 tsp matcha powder (I like this brand)
1/4 + 2 tbsp. chia seeds
Take a large mason jar and combine all ingredients. Shake vigorously until totally combined. Let sit for 10 minutes. Then shake again until all chia seeds have separated and no clumps remain.
Transfer to jars or ramekins and place in fridge until set - about 2-3 hours.
In the meantime, prepare the whipped coconut cream (optional).
Top with crumbled Nilla Wafers or substitute with another vegan or GF cookie.
notes:
for best results, let pudding set in refrigerator overnight.
