Salted Bourbon Butterscotch Pudding for Two
A scaled down recipe for this rich and indulgent Salted Bourbon Butterscotch Pudding will be the perfect dessert for your next date night!
2 tbsp. butter
1/2 cup brown sugar
Big pinch sea salt
1 1/2 tbsp. cornstarch
1 1/4 cups milk
1 egg
1 tsp. whiskey
1 tsp. vanilla
Melt the butter in a small saucepan. Add the brown sugar and salt, stirring until mixture is moist. Remove from heat and set aside.
In a small bowl, add the cornstarch and a 1/4 cup of the milk. Whisk thoroughly until no lumps remain. Add the egg and whisk again.
Add the cornstarch mixture to the brown sugar mixture then gradually add the remaining 1 cup of milk, whisking constantly. Bring the mixture to a boil over medium heat continuing to whisk. Once mixture has come to a boil, reduce heat to a simmer and cook, while whisking, for 1-2 minutes. Remove from heat.
Add the whiskey and vanilla to the pudding and stir until well blended.
Run the pudding through a sieve into two ramekins or pudding dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
