Matcha Almond Cookies
Adapted from Love & Olive Oil’s recipe for Matcha Amaretti Cookies
2 1/4 cups almond flour (I like this one)
1 cup sugar
1 tbsp. matcha powder
pinch salt
2 egg whites
1/4 tsp. lemon juice
1/2 tsp. almond extract
powdered sugar
Preheat oven to 300°F and stack two heavy baking sheets together. Line with parchment paper and set aside.
Whisk almond flour, sugar, matcha and salt together in a bowl and set aside.
In the bowl of a stand up mixer, whisk egg whites and lemon juice until they hold stiff peaks. Add the beaten eggs and almond extract to the bowl of dry ingredients, mixing until fully incorporated. You may need to use your hands to bring it all together.
Roll dough into 1” balls then roll in powdered sugar. Place about 1 1/2” apart on the cooking sheet and bake for about 30 minutes or until tops are cracked and the bottoms are beginning to become golden in color.
Remove from oven and allow to cool for a couple of minutes on the baking sheet. Then, transfer to wire racks to cool completely before serving.
