Mango Matcha Popsicles
Yields 8 popsicles
1 cup frozen or fresh Mango, cubed
3/4 cup Almond Milk (divided)
4 tsp. Honey (divided)
1 tbsp. Matcha Powder
Toasted Coconut for topping (optional)
In a blender, add mango chunks, 1/4 cup almond milk, and 2 tsp. honey. Blend on high until smooth. Add more almond milk or honey to adjust texture and taste as needed.
Pour mango mixture into 8 popsicle molds. Place in freezer.
Rinse out blender and add matcha powder and remaining honey and almond milk. Blend until smooth and add more almond milk or honey to adjust texture and taste as needed.
Pour matcha mixture on top of the mango mixtures in the molds. Insert popsicle sticks and place mold back in freeze for a least 4 hours
